TASTING NOTES
The 2005 vintage was very balanced, with long growing season allowing the grapes to slowly mature without excessive sugar levels. Our 2005 Cabernet is made entirely from our Estate grown fruit. Very young at the time of these notes, the wine shows promising depth and complexity of aromas and flavors. The wine is dark red in color with first impression of a ripe plums, Bing cherries, cigar box and toasty/ smoky oak. Further aeration reveals layers of forest floor, cloves and exotic spices. The mouth feel is surprisingly soft and juicy considering its youthfulness with round and mature tannins, well balanced acidity and an impression of sweetness on the finish. Age for 5 to 8 years.
